Diners in Houston will get an exclusive preview of what is coming to Fort Davis when Chef Dylan McShan presents a special one-night “Shooting Star Dinner” at Perseid restaurant on July 1.

The event will serve as a public preview of dishes planned for The Sleeping Lion, McShan’s highly anticipated restaurant currently under development in downtown Fort Davis. The restaurant is expected to open in 2026 and has already generated significant interest among food enthusiasts across West Texas.
Hosted at Perseid, the Michelin-recommended French-inspired bistro located inside Houston’s Hotel Saint Augustine, the dinner will feature a multi-course menu highlighting McShan’s signature live-fire cooking techniques and seasonal ingredients.
The menu includes heirloom tomatoes with smoked corn purée, charred avocado with black garlic glaze, red snapper ceviche, smoked beef cheek on a Parker House roll, grilled Napa cabbage, Ora King salmon, smoked chicken and a Pecos melon ice box pie dessert.
McShan, who previously worked in acclaimed Houston kitchens including Pax Americana and Underbelly before helping open Rosie Cannonball, confirmed earlier this year that he is leading The Sleeping Lion project at 211 State St. in Fort Davis.
The restaurant is expected to become one of the region’s most notable dining destinations, bringing a chef-driven culinary experience to the heart of the Davis Mountains.
