The concept, branded Casa Chihuahua, features a menu centered on Mexican-inspired breakfast and lunch offerings, including tacos, burritos and shareable sides. Early menu offerings include soft tacos filled with barbacoa, discada and slow-cooked pork asado, along with burritos featuring desebrada-style shredded beef in red or green chile sauces.
Photos shared by the hotel this week showcase fresh tortillas topped with shredded beef, cabbage, onion and cilantro, signaling a focus on traditional flavors with a modern presentation.
Located at 105 S. Highland Ave., Hotel Saint George has long been a fixture in Marfa’s hospitality and tourism scene, serving guests in the heart of downtown while also hosting events, dining and community gatherings.
