Stepping into Jett’s Grill at the iconic Hotel Paisano, it’s hard not to be captivated by the charm that drips from every corner. On my recent visit, I was greeted with impeccable service even before I could settle into the ambiance. Carter, the manager, ensured I was seated immediately, knowing I was in a hurry, yet eager to savor and capture the culinary delights.

The evening began on a high note with bartender Jeremiah’s mixology prowess. His concoctions are more than just drinks; they’re experiences. One sip of the Smoky Basil, a blend of vida mezcal, fresh basil, lime, and agave with a tajin rim, confirmed Jeremiah’s reputation. His vibrant personality and spot-on recommendations added another layer of enjoyment to the experience.
Server Sujei, ever-observant and caring, ensured that my dining experience was without any interruptions. I especially appreciated her consideration when I was photographing my dishes. A quick inquiry of, “Am I in your shot?” before she went about her duties showcased her attentiveness.
Jett’s Grill has successfully intertwined timeless class with modern gastronomy. The Heirloom Caprese Salad, adorned with baby spinach, arugula, mozzarella pearls, and heirloom cherry tomatoes, drizzled in a zesty lemon basil vinaigrette, was a refreshing starter. It was a harmonious blend of textures and flavors that danced gracefully on my palate.
However, the pièce de résistance for the evening was undoubtedly the Mole Rojo Chicken Tacos. Hand-made corn tortillas enveloped succulent chicken, crowned with a unique candied jalapeño pineapple slaw. Every bite was a symphony of contrasting flavors, a testament to the chef’s expertise.
Jett’s Grill offers an array of dishes, from the pistachio-crusted sirloin steak to the mighty Black Angus GIANT burger, and for those with a penchant for the sweeter side of life, fresh-made desserts await.
A unique charm of Jett’s Grill is its ambiance. Diners can choose to bask indoors or lounge outside by the tiered fountain. The historic fireplace and luxurious leather furnishings inside add to the allure, making it the perfect place for conversations under a Marfa sky full of stars.
