Brian Espinosa no longer involved with Meseta restaurant project at Hotel Paisano

Chef Brian Espinosa is no longer involved with Meseta, the restaurant project planned for the historic Hotel Paisano in Marfa.

Espinosa confirmed Friday that he is no longer part of the project after previously being announced as Meseta’s executive chef.

“You are correct,” Espinosa told the Big Bend Reporter when asked whether he was out of the Meseta deal.

Espinosa said he has not heard what Hotel Paisano plans to do next with the restaurant.

“I haven’t heard the word on the street,” Espinosa said.

He said he is currently in California gathering provisions ahead of Chinati Weekend, which is coming up in Marfa, and that his own next steps remain uncertain.

“Yet to be determined next steps,” Espinosa said.

Meseta had been announced as a new restaurant concept at Hotel Paisano with Espinosa serving as executive chef. His departure leaves unanswered questions about who will lead the restaurant and whether other elements of the previously announced concept will change.

Espinosa did not elaborate on what led to his departure from the project.
