The Sleeping Lion is accepting applications as the new Fort Davis restaurant prepares to open in early fall.
The restaurant is hiring for salaried management positions and front- and back-of-house jobs. Owners said they are seeking applicants who care about hospitality, take pride in their work and want to help build the restaurant from its beginning.
Experience is valued, but the restaurant said attitude, dependability and a willingness to learn will receive equal consideration.
The Sleeping Lion will feature seasonal ingredients and open-fire cooking in a setting inspired by the Spanish missions and frontier forts of West Texas. Plans call for adobe walls, shaded courtyards and several gathering spaces designed for leisurely meals, celebrations and private events.
Executive chef and co-owner Dylan McShan will lead the kitchen. His experience includes work in three-Michelin-starred restaurants and James Beard Award-winning establishments.
The restaurant describes its approach as elevated dining grounded in the ingredients, landscape and traditions of West Texas.
In addition to regular dining service, The Sleeping Lion plans to offer private dining, special events and full-service catering.
