A special dinner at Perseid in Houston on Tuesday night offered an early look at the food, philosophy and direction of Sleeping Lion, the highly anticipated restaurant currently under development in Fort Davis.
The preview dinner featured a series of dishes expected to reflect the style of cuisine guests will find when the restaurant opens. The menu showcased an approach centered on high-quality ingredients, thoughtful preparation and a balance between refined presentation and approachable flavors.
Courses included heirloom tomatoes with smoked corn purée and salsa verde, charred avocado with black garlic glaze and pecan furikake, red snapper ceviche, a smoked beef cheek roll, grilled Napa cabbage, Ora King salmon, smoked chicken and a Pecos melon ice box pie.
The meal demonstrated a culinary identity that draws inspiration from both regional ingredients and broader contemporary influences. Rather than focusing on a single culinary tradition, the dishes highlighted fresh produce, seafood, smoked meats and seasonal flavors presented in a way that felt sophisticated without becoming overly formal.

Once construction is complete, ownership expects to spend roughly two additional months hiring staff, training employees and preparing operations before welcoming guests.
Based on the current timeline, Sleeping Lion appears to be on track for an opening sometime this fall, potentially around September, though an official opening date has not yet been announced.
